Almond Chicken Casserole

3 cooked boneless chicken breasts
1/2 cup red pepper
1/2 cup yellow pepper
2 cloves garlic
1/2 slivered almonds
1 cup shredded swiss cheese divided
1 cup mayonnaise

Preheat oven to 350. Cut chicken into cubes. Heat oil in a small skillet over medium high heat. Add bell peppers and garlic. Saute until tender, about 5 minutes. Combine the chicken, 1/4 cup of almonds in a large bowl. Stir in the bell pepper mixture and 3/4 cup of Swiss cheese. Add mayonnaise and mix gently. Spoon chicken mixture into a large baking dish. Bake until golden brown about 25 minutes. Sprinkle remaining almonds and Swiss cheese on top of casserole and bake for 5 more minutes. Serve with French bread.

Total time 25 minutes prep, 30 minutes in oven

Adapted from Easy Everyday cooking. They included celery and used onion instead of garlic.
